'Masala Chai' by Ishaan

Read this recipe by a student in Class 9 at The Palace School.

Ingredients: 

  • 2 cups water
  • 1 cup milk
  • 2 teaspoons black tea leaves (Assam or Darjeeling work well)
  • 2 teaspoons sugar (adjust to taste)
  • 1 inch piece of fresh ginger, peeled and grated
  • 1 whole green cardamom pods, lightly crushed
  • 1 whole clove
  • 1 cinnamon stick
  • A pinch of black peppercorns
  • A pinch of ground nutmeg (optional)

Recipe:

  1. Put green cardamoms, cinnamon, cloves, and black peppercorns in a mixer jar and grind to a fine powder.
  2. Crush ginger in a mortar with a pestle.
  3. Turn on the gas and put the pan on it.
  4. Heat 2 cups water in a pan till it comes to a boil, add tea leaves, crushed ginger, sugar and 1 teaspoon ground masala, mix well and let it boil for 3-4 minutes. Add milk and bring it to a boil again.
  5. Set the tray with the cups in it to strain the tea.
  6. Using the strainer, strain into serving cups and serve hot.

Note: This recipe is for 2 cups of masala tea.
